Chicken and Maitake Mushrooms in Sherry Stew

Product Features

The exquisite taste of this dish, which our chef, Tajima, experienced in the Jura region of France, left an unforgettable impression on him. This dish is an adaptation of the classic "Coq au Vin Jaune," recreated with Japanese ingredients. The umami-rich broth from the maitake mushrooms and the deep flavor of Choshu chicken are enhanced by the rich and slightly acidic notes of sherry, resulting in a firm and multi-layered taste. The inspiration for this recipe came from the rugged mountains of the Northern Alps, evoking the mineral-rich land of the Jura region.
