Tomato Zha Jiang Mapo Rice - with Fried Tofu Puffs

Tomato and Zha Jiang Combined into Mapo Rice

Product Features

Using a zha jiang (fried sauce) meat sauce flavored with garlic and ginger as its base, this dish incorporates chili, Sichuan peppercorns, Shaoxing wine, and black vinegar to create an authentic, aromatic, and spicy sauce. This is then complemented by a fresh, sweet, and tangy tomato sauce. This special Mapo Rice features a "Double Entry System" with two independently packaged sauces, perfectly combining two sauces prepared separately.

This design, which keeps the sauces unmixed, successfully highlights the "spicy" and "sweet and sour" flavors without one overshadowing the other, providing a richer taste experience. For the tofu, we specifically chose fried tofu puffs for a more satisfying texture.

The inspiration for this dish comes from the beautiful peaks of Yatsugatake – "Tengudake." Here, you find stylish, moist forests below and magnificent, massive rock walls above, all while experiencing the warmth of a mountain hut. This dish, much like Tengudake's "twin peaks," perfectly blends the dual aspects of severity and charm.
